TOMATO SAUCE
Good as a base for pasta bakes, bologneses, chillis and other pasta dishes.
Can be batch cooked and frozen for quick easy meals.
Serves 2 adults
Ingredients
1 onion, chopped
1 courgette, grated
1 tin chopped tomatoes
tomato puree
italian seasoning, salt and pepper to taste
sprinkle worcestor sauce
olive oil
Method
Soften onion and courgette in enough olive oil to coat all ingredients.
Pour in tin tomatoes and add seasonings.
Mix well then mash for a chunky sauce, or blitz with hand blender for a smoother sauce.
Can be used or decanted for freezing straight away or can simmer on low heat for as long as desired for increased flavour.
